You can prepare this recipe with any type of leafy green in my opinion. Collards, Kale to name a couple... I just so happened to have some leftover dandelion greens. You can also substitute the cranberries for sun-dried tomatoes! Serve this over brown rice for a complete meal.Dandelion Greens
1 bunch dandelion greens
2 TBL olive oil
1 clove garlic
salt/pepper
1/4 C dried cranberries
1/8 C chopped walnuts
2 dashes of Shoyu or Tamari soy sauce
Saute garlic in oil for 2 minutes. Add rinsed greens, cranberries, walnuts and saute for 4 minutes or until the greens are wilted. Add soy sauce and saute another minute. Season with salt and pepper.
